Rhubarb Almond Crumb Pie


April’s Pie Club is a riff on one of my favorite spring cakes, and a celebration of one of my favorite spring ingredients, rhubarb! I love the Rhubarb Custard Cake from Bon Appetite, as it’s sweet, tart, light, and full of flavor. We took that recipe and turned it into the Rhubarb Almond Crumble Pie. When you tuck into the pie, you get this bright rhubarb filling with a hint of almond, and then the crunch of almonds on top. Swirl a bit of cream on top or dollop with whipped cream, sit back, smile, and count the days until summer!


Ingredients:  rhubarb, almonds, flour, butter, sugar, vegetable shortening, tapioca starch, vanilla extract, almond Extract, lemon zest, apple cider vinegar, salt, lemon juice, egg.
