Rhubarb Ginger Pie
This pie a flavor explosion! Some folks are always asking is for a straight rhubarb pie, so we obliged. Boy, is it delicious. Ginger and rhubarb compliment each other are maybe my new favorite pairing. This pie is on the tart side, but has just enough sugar to let you indulge and enjoy! The flavors blend perfectly and when you top it with a dollop of whipped cream or ice cream, you are immediately transported to pie heaven.
Pie comes in a 10 inch tin and serves 8-10 people.
Ingredients: Rhubarb, flour, butter, sugar, vegetable shortening, tapioca starch, ginger, apple cider vinegar, salt, lemon juice, egg.
