Sour Cherry Honey Almond Pie
We have to confess, cherries are our jam. We were lucky enough to be gifted some intense sour cherries this past summer and stashed them in the freezer. We can't think of a better time to bring them out then now, in the dead of winter! Cherries when paired with almond extract, hits all the flavor notes french chefs wax on about. This pie is definitely tart, but the honey and almond notes tames the sour and gives you the sense memory of eating the best jolly rancher you ever had! And, if you are worried about frozen berries, they actually create this intense jammy flavor that heightens the flavor of the cherries.
Pie comes in a 10 inch tin and serves 8-10 people.
